Banana Tiffin

Makes 8-10 pieces

Crunchy pieces of biscuit and banana set in a gooey filling between thick layers of rich dark chocolate - heaven!

ingredients:

  • 200g (8oz) dark chocolate*
  • 50g (2oz) butter
  • 50g (2oz) caster sugar
  • ½ tsp banana essence
  • 1tbsp cocoa*
  • 1 medium egg, beaten
  • ½ packet JUVELA Gluten-Free Tea Biscuits, broken
  • 50g (2oz) dried banana chips*

15cm (6inch) square tin, lined

Method:

Melt half the chocolate and spread over the base of the tin. Allow to set. Place the butter and sugar in a pan and melt over a gently heat. Beat in the banana essence, cocoa and egg and heat for 1 minute, stirring continuously. Add the broken biscuits and banana chips and stir well to ensure that they are evenly coated. Spread the mixture over the set chocolate layer and press down well. Melt remaining chocolate and spread over the top. Chill until set and then cut into squares or triangles to serve.
