Banana Sundae Surprise

Serves 4

Creamy banana mousse layered with a crunchy chocolate and peanut butter biscuit - a mouth-watering pud that can be made in advance and refrigerated.

ingredients biscuit base:

  • 1 packet JUVELA Gluten-Free Digestives, crushed into crumbs
  • 50g (2oz) peanut butter*
  • 75g (3oz) milk chocolate*

ingredients banana mousse:

  • 200g (8oz) cream cheese*
  • 1 medium banana
  • 25g (1oz) caster sugar
  • Extra chocolate for decoration

Method:

For the biscuit base, melt the peanut butter and chocolate in a microwave. Stir in the crushed biscuits and coat with the chocolate mixture. For the mousse, place the cream cheese, banana, and sugar in a food processor and pulse until blended. Layer biscuit mixture and mousse in 4 sundae glasses, sprinkle with grated chocolate and chill before serving.
