Apricot & Almond Teabread

A tasty teatime treat - ideal served hot or cold. This recipe also freezes very well - if it lasts that long!

Before you start, pre-heat the oven to 180°C/350°F/Gas Mark 4 and grease and line a 2lb loaf tin.

ingredients:

  • 175g (7oz) JUVELA Gluten-Free Fibre Mix
  • ¼tsp bicarbonate of soda
  • 75g (3oz) butter or margarine
  • 100g (4oz) caster sugar
  • 2 medium eggs, beaten
  • 50ml (2fl oz) milk
  • 150g (6oz) dried apricots, finely chopped
  • 75g (3oz) ground almonds
  • 25g (1oz) flaked almonds

Method:

Place all the ingredients (except the flaked almonds) in a large bowl and beat together until thoroughly combined. Place the mixture into the prepared tin, sprinkle the flaked almonds on top and bake in a pre-heated oven for 45-50 minutes until well risen and firm to touch. Remove from tin and allow to cool on a wire rack.
