Sticky Toffee Banana Pudding
Serves 4
Nothing can beat the old favourite sticky toffee pudding and custard! One of the nation's favourite winter warming puds - made here with sliced banana in the sponge - yum!
ingredients:
- 200g (8oz) fresh dates, stoned
- 1tsp bicarbonate of soda
- 200ml (8fl oz) boiling water
- 75g (3oz) butter, softened
- 150g (6oz) caster sugar
- 2 medium eggs, lightly beaten
- 150g (6oz) JUVELA Gluten-Free Mix
- Pinch of mixed spice
- Pinch of ground cinnamon
- 2tbsp natural yoghurt
- 1 medium banana, sliced
Oven temperature: 180°C/350°F/Gas Mark 4. 20cm (8inch) buttered baking dish.
Method:
Place the dates and bicarbonate of soda in a large bowl, pour boiling over boiling water, leave for 2 minutes and then drain. Finely chop the dates (by hand or in a food processor).
Beat together the butter and sugar until light and fluffy. Add the eggs, Gluten-Free Mix, and spices. Stir in the yoghurt and chopped dates.
Transfer to the prepared dish, push the slices of banana into the top and bake in a pre-heated oven for 35-40 minutes until golden.
