Chicken & Sunblush Pasta
Serves 2
This simple pasta dish combines strips of tender chicken breast with the fantastic flavours of sunblush tomatoes and freshly cooked Fusilli, bound in a creamy tomato sauce. Ideal served sprinkled with grated mozzarella cheese* and slices of garlic bread made using the JUVELA Gluten-Free Pizza Bases.
ingredients:
- 150g (6oz) JUVELA Gluten-Free Fusilli
- 250g (10oz) passata*
- 3tbsp virtually fat free fromage frais*
- 1 garlic clove, peeled and crushed
- 150g (6oz) cooked chicken breast, cut into strips
- 75g (3oz) sunblush tomatoes
- 1tbsp fresh basil, roughly chopped
- Salt and freshly ground black pepper
Method:
Cook the Fusilli as per instructions on pack. Drain and rinse thoroughly with boiling water.
In a large pan, combine the passata, fromage frais and garlic. Add the chicken, sunblush tomatoes and basil, and season to taste. Stir in the freshly cooked pasta and heat thoroughly before serving.
