The pastry is now ready to use. Gluten-free pastry does not need 'resting' but you may find it easier to handle if slightly chilled so pop in the fridge for about 20 minutes.

The pastry can be stored in the fridge for up to 3 days or frozen for use at a later date.

To roll out, lightly dust the surface with Mix and roll out using smooth, short strokes. Keep the pastry moving around the surface but do not turn it over.

As the piece gets bigger use your rolling pin, rather than your hands to pick it up.
