Lemon Drizzle Cake

Description
One of our all time favourites - Lemon Drizzle Cake!
Ingredients
150g (6oz) Juvela Gluten-Free White Mix
1 1/2 tsp baking powder*
150g (6oz) butter
150g (6oz) caster sugar
3 medium eggs (lightly beaten)
zest of a lemon
For the drizzle:
100g (4oz) caster sugar
juice of a lemon

100g (4oz) caster sugar
juice of a lemon
Instructions
You will need a 2lb loaf tin, greased and lined.
Oven temperature: 180ºC/350ºF/Gas Mark 4
Place the cake ingredients in a large bowl. Beat with a hand mixer until pale and creamy.
Transfer to the prepared tin and bake for 20-25 minutes until golden. Allow to cool on a wire rack.
For the drizzle mix together the sugar and lemon juice and heat in a pan. Make little holes in the top of the cake with a skewer or cocktail stick and drizzle over the warm topping.
