Sticky Toffee Banana Pudding

Description
Nothing can beat the old favourite sticky toffee pudding and custard! One of the nation's favourite winter warming puds - made here with sliced banana in the sponge - yum!
Ingredients
1tsp bicarbonate of soda
Pinch of mixed spice
Pinch of ground cinnamon
2tbsp natural yogurt*
1 medium banana (sliced)
200g (8oz) fresh dates (stoned)
200ml (8fl oz) boiling water
75g (3oz) butter, softened
150g (6oz) caster sugar
200g Juvela White Mix

Instructions
- Oven temperature: 180°C/350°F/Gas Mark 4. 20cm (8inch) buttered baking dish.
- Place the dates and bicarbonate of soda in a large bowl, pour boiling over boiling water, leave for 2 minutes and then drain. Finely chop the dates (by hand or in a food processor).
- Beat together the butter and sugar until light and fluffy. Add the eggs, Gluten-Free Mix, and spices. Stir in the yoghurt and chopped dates.
- Transfer to the prepared dish, push the slices of banana into the top and bake in a pre-heated oven for 35-40 minutes until golden.
