Luscious Lemon Pud

Description
Steamed sponge puddings - classic winter warmers for those dark cold nights. This recipe uses tangy lemon curd to make a deliciously light but comforting pud in minutes. Great with hot custard*
Ingredients
100g (4oz) Juvela Gluten-Free Mix
4tbsp lemon curd*
1tsp baking powder*
100g (4oz) light muscovado sugar
100g (4oz) butter, softened
2 medium eggs, beaten
2tbsp water
grated rind of a lemon

Instructions
- Grease and base line a 1 litre (2 pint) pudding basin.
- Spoon the lemon curd into the base of the pudding basin. Beat together all other ingredients until light and fluffy. Spoon the mixture over the lemon curd and smooth the top.
- Cover loosely with cling film and microwave on full power for 6 minutes. Leave to stand for 5 minutes, then remove the cling film and turn out onto a plate. Alternatively, to bake in a pre-heated oven, do not cover with cling film.
- Place in a pre-heated oven (190°C/375°F/Gas Mark 5) for 20-25 minutes until golden.
