Ginger Spice Cake

Description
Classic ginger cake - with its soft dark crumb and spicy ginger tang, it's one of the best teatime treats around! Stays fresh and moist, and some would say tastes even better a couple of days after baking (if kept wrapped in foil or an airtight container).
Ingredients
150g (6oz) butter or margarine
150g (6oz) soft brown sugar
150g (6oz) Juvela Gluten-Free mix
1tsp ground ginger
1tsp cinnamon
1tsp nutmeg
2 medium eggs, lightly beaten
For the decoration:
3tbsp glace icing (optional)
50g (2oz) glace ginger (optional)

Instructions
- Before you start, pre-heat the oven to 180°C/350°F/Gas Mark 4 and grease and base line a 2lb loaf tin.
- Melt the fat and sugar together in a pan. Remove from the heat and stir in the Mix, ginger, cinnamon, nutmeg and eggs. Beat well until smooth and pour into prepared tin.
- Bake in a pre-heated oven for 40-45minutes. Allow to cool, drizzle with glace icing and decorate with glace ginger.
