Bread & Butter Pudding

Description
A delicious gluten-free version of the classic British pudding - gorgeous with hot creamy custard*
Ingredients
1 Juvela Gluten-Free sliced loaf, crusts removed
50g (2oz) butter, softened
50g (2oz) sultanas
grated rind of a lemon
2 medium eggs, lightly beaten
375ml (3 1/2fl oz) milk
40g (1 1/2oz) caster sugar
pinch of grated nutmeg

Instructions
Oven temperature: 180ºC/350ºF/Gas Mark 4
- You will need a 1 litre (2pint) greased oven-proof dish.
- Spread the slices of bread thickly with butter, cut into triangles and place half the slices into the prepared dish. Sprinkle over half the sultanas and half the lemon rind and top with the remaining bread, buttered side up.
- Beat together the eggs, milk, sugar and nutmeg and pour over the bread. Sprinkle with the rest of the lemon rind and sultanas. Allow the pudding to stand for 15 minutes, then bake in a pre-heated oven for 1 hour until golden.
