Banoffee Muffins

Makes 12 large or 30 mini muffins

Description

Simple to make and quick to bake - a mouthwatering combination of banana and toffee sauce is used to make these moreish muffins!

Ingredients

200g (8oz) Juvela Gluten-Free Mix
1tsp baking powder*
100g (4oz) soft margarine
100g (4oz) caster sugar
4 medium eggs, beaten
1 medium banana, mashed
5tbsp toffee sauce*

Instructions

  1. Oven temperature: 190°C/375°F/Gas Mark 5
  2. Place all the ingredients in a large bowl and beat together until light and fluffy.
  3. Divide between muffin cases and bake in a pre-heated oven for about 15-20 minutes (10-15 minutes for mini muffins) until golden and firm to touch.
