Banana Sundae Surprise

Description

Creamy banana mousse layered with a crunchy chocolate and peanut butter biscuit - a mouth-watering pud that can be made in advance and refrigerated.

Ingredients

for the biscuit base:
1 packet Juvela Gluten-Free digestives, crushed into crumbs
50g (2oz) peanut butter*
75g (3oz) milk chocolate*
for the banana mousse:
200g (8oz) cream cheese
1 medium banana
25g (1oz) caster sugar
extra chocolate for decoration

Instructions

  1. For the biscuit base, melt the peanut butter and chocolate in a microwave.
  2. Stir in the crushed biscuits and coat with the chocolate mixture. For the mousse, place the cream cheese, banana, and sugar in a food processor and pulse until blended.
  3. Layer biscuit mixture and mousse in 4 sundae glasses, sprinkle with grated chocolate and chill before serving.
