Minted Feta and Pea Pasta Salad

Description

A fresh and light pasta salad - perfect for packed lunches or eating al fresco!

Ingredients

100g (4oz) Juvela Gluten-Free fibre penne (dry weight)
1tbsp fresh mint leaves, roughly chopped
50g (2oz) frozen peas
100g (4oz) feta cheese, crumbled
50g (2oz) rocket leaves
zest & juice of ½ lemon
salt and freshly ground black pepper
extra virgin olive oil

Instructions

  1. Cook the Penne as per instructions on pack; add the peas 2 minutes before the end of the cooking time.
  2. Drain and rinse thoroughly with cold water.
  3. Transfer to a large bowl and add the crumbled feta, rocket, mint leaves, lemon juice and zest.
  4. Drizzle with olive oil and toss all ingredients together to combine.
