Ham & Wholegrain Mustard Scones

Description
A delicious savoury flavoured scone, great served on their own, or spread with butter.
Ingredients
200g (8oz) Juvela Gluten-Free fibre mix
1tsp baking powder*
50g (2oz) margarine
75g (3oz) smoked ham, diced
1tbsp wholegrain mustard*
salt and freshly ground black pepper
1 medium egg, mixed with enough milk to make 125ml of liquid
mustard seeds

Instructions
- Before you start, pre-heat the oven to 220°C/425°F/Gas Mark 7 and lightly grease a baking tray.
- Place the Fibre Mix and baking powder in a bowl and rub in the margarine until the mixture resembles breadcrumbs. Stir in the chopped ham, mustard, seasoning and sufficient liquid to form a soft but not sticky dough. Knead lightly until smooth then roll out to a 18cm (7 inch) round on a surface lightly dusted with Mix.
- Place on baking tray and mark into 8 triangles using the back of a knife. Brush the top with remaining egg and milk mixture and sprinkle with mustard seeds. Bake in a pre-heated oven for 15-20 minutes until golden brown.
