Coronation Chicken Pasta Salad

Description

This recipe is based on the ingredients for a coronation sauce, combined with freshly cooked Juvela Gluten-Free Fusilli to make a delicious pasta salad.

Make this dish as spicy as you like, using a mild, medium or hot curry paste. As its served cold, you can make it in advance and keep it chilled.

Ingredients

2tbsp curry paste*
150g (6oz) Juvela Gluten-Free fusilli
50g (2oz) currants
50g (2oz) dried apricots, chopped
25g (1oz) flaked almonds
150g (6oz) cooked chicken (sliced)
4tbsp half-fat crème fraiche*
salt and freshly ground black pepper

Instructions

  1. Cook the Fusilli as per instructions on pack.
  2. Drain and rinse thoroughly with cold water.
  3. Combine all other ingredients with the pasta and season well.
