Coronation Chicken Pasta Salad

Description
This recipe is based on the ingredients for a coronation sauce, combined with freshly cooked Juvela Gluten-Free Fusilli to make a delicious pasta salad.
Make this dish as spicy as you like, using a mild, medium or hot curry paste. As its served cold, you can make it in advance and keep it chilled.
Ingredients
2tbsp curry paste*
150g (6oz) Juvela Gluten-Free fusilli
50g (2oz) currants
50g (2oz) dried apricots, chopped
25g (1oz) flaked almonds
150g (6oz) cooked chicken (sliced)
4tbsp half-fat crème fraiche*
salt and freshly ground black pepper

Instructions
- Cook the Fusilli as per instructions on pack.
- Drain and rinse thoroughly with cold water.
- Combine all other ingredients with the pasta and season well.
