Breakfast Muffin
Description
These delicious nutritious muffins make the perfect breakfast on the go! Packed with the goodness of fruit and seeds, they're a great start to the day.
For a change, use chopped dried apricots in place of sultanas and pistachios in place of pumpkin seeds.
Ingredients
2tsp baking powder*
100g (4oz) soft dark brown sugar
25g (1oz) pumpkin seeds (plus extra to sprinkle on top)
50g (2oz) sultanas
100ml (4fl oz) sunflower oil
4 very ripe medium bananas (mashed)
2 medium eggs (lightly beaten)
2tbsp milk
Instructions
Oven temperature: 180ºC/350ºF/Gas Mark 4
You will need: 12 hole muffin tin, lined with muffin cases
In a large bowl, combine the Fibre Mix, baking powder, sugar, pumpkin seeds and sultanas. Add the oil, banana, eggs and milk and fold the ingredients together with a metal spoon. Divide the mixture between muffin cases, filling them to the top. Sprinkle a few pumpkin seeds on top of each one and bake in a preheated oven for 15-20 minutes until golden. Remove from the oven and allow to cool on a wire rack.
