Banana & Ricotta Pancakes

Description
This delicious sweet treat is so simple to make and is ideal hot or cold. For an extra special treat, sprinkle crushed Crunchie bars over the pancakes and drizzle with honey.
Ingredients
150g (6oz) ricotta
75ml (3fl oz) milk
2 medium egg yolks
75g (3oz) Juvela Gluten Free Mix
1tsp baking powder*
pinch of salt
25g (1oz) butter
1 medium banana (roughly mashed)

Instructions
In a large bowl, mix together the ricotta, milk and egg yolks. Stir in the Mix, baking powder, salt and banana.
Heat the butter in a large frying pan and drop 2tbsp of batter per pancake into the pan. Cook over a low heat for a couple of minutes each side. Repeat with the remaining mixture. Serve hot or cold - perfect with ice cream and honey!
