Baked Mackerel Bruschetta

Description

A twist on a simple bruschetta - the addition of tinned mackerel (or sardines) means you're increasing your intake of omega-3 fatty acids, which research shows is beneficial to your health. This recipe is a perfect light lunch idea and can easily be scaled up.

Ingredients

1 Juvela Gluten-Free part-baked fibre roll
50g (2oz) tinned sardines in tomato sauce*
3 cherry tomatoes, finely chopped
1 small red onion, finely chopped
1 clove garlic, peeled and crushed
1tbsp fresh basil, finely chopped

Instructions

  1. Preheat the oven to 200°C/400°F/Gas Mark 6.
  2. Slice the Part Baked Roll in half. Brush each half with the olive oil.
  3. Combine together the mackerel (or sardines), tomatoes, red onion, garlic and basil and season well.
  4. Divide mixture between each half of the roll. Bake in a pre-heated oven for 10-12 minutes.
