Baked Mackerel Bruschetta

Description
A twist on a simple bruschetta - the addition of tinned mackerel (or sardines) means you're increasing your intake of omega-3 fatty acids, which research shows is beneficial to your health. This recipe is a perfect light lunch idea and can easily be scaled up.
Ingredients
1 Juvela Gluten-Free part-baked fibre roll
50g (2oz) tinned sardines in tomato sauce*
3 cherry tomatoes, finely chopped
1 small red onion, finely chopped
1 clove garlic, peeled and crushed
1tbsp fresh basil, finely chopped

Instructions
- Preheat the oven to 200°C/400°F/Gas Mark 6.
- Slice the Part Baked Roll in half. Brush each half with the olive oil.
- Combine together the mackerel (or sardines), tomatoes, red onion, garlic and basil and season well.
- Divide mixture between each half of the roll. Bake in a pre-heated oven for 10-12 minutes.
